W Brisbane’s Dwelling Room Bar is rethinking its solution to sustainability and waste beneath an artistic collaboration with famend bartender Matt Whiley.

The six-month partnership will see an ever-evolving menu that repurposes would-be discarded components from W Brisbane’s kitchens reminiscent of potato skins, pineapple rind, pumpkin seeds, cauliflower cream and carrot peel the use of cutting edge fermenting tactics to create eco-conscious cocktails.
